Bajigur
Ingredients:
- 600 ml thin coconut milk
- 5 grams black coffee
- 100 ml hot water
- 1 piece of ginger, grilled and crushed
- 2 pandan leaves
- 110 grams coconut sugar
- 1/4 teaspoon ground cinnamon
How to cook:
- Prepare all ingredients first.
- Brew the coffee in hot water, stir, and set aside the grounds.
- Prepare a pot and put all ingredients except the coffee into it. Cook over low heat, stirring slowly, until boiling.
- Once boiling, pour in the brewed coffee (without grounds), and mix well.
- Pour the bajigur into a glass and serve warm.
Iced Coffee with Coconut Sugar
Ingredients:
- 2–3 tablespoons ground coconut sugar
- 1 tablespoon coconut milk
- 250 ml UHT milk
- 1 sachet instant coffee
- Ice cubes, as needed
How to make:
- Boil coconut sugar with 50 ml water, stirring evenly.
- Brew instant coffee with boiling water.
- Prepare a glass.
- Pour the melted coconut sugar into the glass.
- Add ice cubes, then pour in the coffee and milk. You may add sweetened condensed milk if you wish.
- Serve while chilled.
Coconut Sugar Molen BananasIngredients:
Ingredients:
- 250 grams all-purpose flour
- 1 egg
- 1 tablespoon cassava sugar
- 40 grams butter
- 1/2 teaspoon salt
- 50 ml – 100 ml water (adjustable)
- 6 bananas, cut in half
Topping:
- Coconut sugar powder
How to cook:
- Combine all the dry ingredients and knead.
- Gradually add water until the dough is half smooth.
- Add the butter and knead again until elastic.
- Let the dough rest for 30 minutes. After resting, knead briefly again.
- Divide into 12 equal balls.
- Roll each ball flat and put a piece of banana on it. Fold and roll up tightly.
- Heat oil in a pan.
- Sprinkle flour on the dough to avoid sticking and fry until crispy.
- Drain, then dust with coconut sugar once cooled. Serve and enjoy.
Coconut sugar powder
Ingredients:
- 230 grams high-protein flour
- 1 flax egg
- 3 tablespoons organic coconut sugar
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 100 ml–120 ml water or milk
- 30 grams butter
Topping:
- Coconut sugar
How to cook:
- Combine all ingredients except for the butter and salt.
- Gradually add water or milk.
- Knead until halfway smooth, then add the butter and salt.
- Cover with plastic wrap and let rise for about 1 hour.
- After 1 hour, deflate the dough and weigh it into equal segments.
- Shape into donuts and let rest for 30 minutes.
- Fry the donuts until nicely browned.
- Roll in organic coconut sugar and serve.
